We have a winner!

Congrats to Debbie Schnell – the winner of a Gluten Free Pantry Angel Food Cake mix – with her comment:

I can’t believe you have a box of the Gluten-Free Pantry angel food cake mix and you’re giving it away! I am really trying to cross my swollen fingers for this one.

This angel food cake with some of my fresh made Ponchatoula strawberry preserves spooned over top was one of my early summer treats that I am longing for.

My other cake love is for Namaste’s spice cake mix, but made as a carrot cake. I also always add some flax and whatever dried fruits and nuts I have on hand; apples, pineapple, and walnuts are my favorite mix-ins.

Oh, and then there’s chocolate. If I need my chocolate fix, you can’t beat Pamela’s chocolate cake mix for some really familiar, soft, light “real” chocolate cake texture and taste. I just bump it up by either substituting espresso for some of the liquid in the recipe or just adding some orange zest and using o.j. for some of the liquid. When I am feeling especially creative, I make my Aztec Chocolate Cake by adding 1/2 tsp. cinnamon, 1/2 tsp. cayenne, 2 T. honey and 1/2 c. finely ground almonds.
