Product Review:The Pure Pantry Wholegrain Dark Chocolate Cake Mix

This Pure Pantry mix was purchased on sale at my local grocery store for $5.99. This gluten free cake mix usually retails for $6.99- $7.99.

I am ecstatic about the improvement in gluten free cakes. One of my all time favorite cake mixes is the chocolate cake mix from Pamela’s Products. It was the first time I had a GF cake that tasted good and didn’t fall apart. How would this cake mix compare?

This mix can make chocolate cake, chocolate cupcakes, or chocolate pound cake. I made chocolate cupcakes. ¬†To prepare, I first blended the provided dry mix, 3 large eggs, 1 c milk, and 1/2 c oil. The consistency reminded me of a thick cake batter. Then I added 1 c hot water. After I added the water the batter became very thin. In fact, it looked like a chocolate broth! I had to ladle the batter into the cupcake pan because it was so thin. I baked it for 20 minutes in a 350 degree oven. It made 16 cupcakes, but could make a 9×12 cake as well.

When I removed the cupcakes from the oven, I was surprised at how good they looked. I expected them to be flat, but they rose well and even sprung back when I touched them. I tried to remove a cupcake from the pan right away, but it fell apart. I waited until they were cool to remove the rest of the cupcakes, and I had no problem with them staying together.

The cupcakes have a great chocolate taste. They weren’t too sweet, but still provided a rich flavor. There was a noticeable flour taste, but it did not overpower the cupcake. I topped the cupcake with homemade buttercream, which was delicious. The cupcake did not fall apart or crumble in my mouth. It remained chewy and moist.

I served these cupcakes to a group of gluten eaters during the Super Bowl, and they loved them. These Pure Pantry cupcakes were a hit!

Pros: rich dark chocolate taste, moist and spongy

Cons: very thin batter makes it difficult to put into a cupcake pan, pricey
