Product Review: Taste of Gluten Free Chocolate Cake/ Cupcakes

Another birthday means a new cake mix to try. I chose a Taste of Gluten Free chocolate cake, which was sent to us to try. Taste of Gluten Free is a 2 year old gluten free business based in Georgia. Their cake mix retails for $5 , and makes a two layer cake or 24 cupcakes.
I prepared this cake by first mixing 1/2 c vegetable oil, 1 t pure vanilla extract, and 1 c water. I added the dry mix provided. The directions next said to add 1 c hot coffee. I don’t drink coffee, so I added hot water instead, hoping it didn’t mess with the taste. I added the batter to two nine cake pans. I baked them for 30 minutes in a 350 degree oven.
I doAfter I let the cakes cool, I tested the cake. I noticed the texture and mouth feel was soft and gooey. The consistency and texture reminds me more of a brownie then a cake. It featured a rich chocolate taste, and was on the sweeter side. After I added the frosting it tasted way too sweet. I could only eat a couple of bites before I was done.
Since the cake was so soft I wondered how the frosting would spread. Would it crumb a lot, or stay together? I was pleasantly surprised to find that the cake stayed together well, and did not crumb or fall apart when I spread the frosting on the cake alyers.
n’t feel that I missed anything from not adding coffee, the flavor and consistency was great without it. I liked it overall, but feel that this cake would make a better brownie than a cake.
