Product Review: Stonewall Kitchen Pancake and Waffle Mix

I try to make a hearty breakfast to start the morning off right. It ranges between eggs, french toast, pancakes, and oatmeal. I recently found a decent gf pancake recipe but I am always on the hunt for something better. I saw this mix and though it is a bit pricey at $8, I gave it a try.
I love the packaging. It looks upscale and appealing in the round canister container. I would put a bow on it and give it as a gift! Whoever is in charge of marketing and design did a great job on this product. I also liked that it is in a canister as opposed to a box.
To prepare I mixed 1 cup dry mix, 2/3 cup+ 2 Tbsp milk, 1 egg, and 1 Tbsp melted butter. The batter was thinner than what I’m used to. I had a bit of difficulty preparing non-burnt pancakes. The pancakes didn’t really bubble, so it was a guessing game as when to turn them. I never did get one perfectly brown.
The pancakes puffed a bit on the griddle as so appeared light and fluffy. They were fluffy, but could have been lighter. The batter stayed somewhat moist and never achieved the lightness of a gluten pancakes. The taste was good, and the texture a tiny bit off; but nothing more than I haven”t tasted with other GF pancakes. Overall, these pancakes were just Ok,

You really must try King Arthur Flour’s Pancake Mix. I add to the mix: cinnamon, GF almond extract, GF vanilla extract, use buttermilk as the liquid, sometimes add as well fresh ground nutmeg, the egg required, and 2 T butter melted. I don’t really measure the cinnamon, almond extr. or the vanilla extr., just eyeball it since I’ve made pancakes for so many years that I know when it’ll be right. Sometimes I even swap out the almond extr. for orange extract. The instructions on the box say to let the resultant mixture sit 5-10 min to thicken, but I never do and they come out heavenly. I cook them in coconut oil and using a electric skillet that I got at Wally World for less than $20 or maybe less than $15. For me both and me, my husband, stepdaughter and son-in-law don’t like any other “brand” and they’re even better than anything you can put together using GF flour on your own and I don’t care what brand you use, although my favorite GF flour blend is now Maninis (made from ancient grains and no rice flours) which makes super super bread and lots of other things. You can get KAF Pancake mix at Whole Foods, Amazon.com, and in my area (Kerrville, TX) my local supermarket: HEB.
