Product Review: Simply Organic Carrot Cake Mix

January through March is full of birthdays in my family. That means lots of cake. Each birthday we try a different cake, hoping to find the one to top them all. Maybe it could be this Simply Organic carrot cake I purchased it at Against the Grain, a gluten free specialty store in Taylorsville, Utah for $3.99.
To prepare this gluten free cake mix, I added 2 eggs, 1/2 c water, and 1 cup grated carrots to the dry mix provided. The directions indicate to bake the cake batter in a 8″ or 9″ cake pan. I only had a 9×13 pan, so I went ahead and used that. I didn’t need to bake it as long, and the baked cake was also not as thick since I used a larger pan.
The cake was incredibly soft and moist, maybe even a little too much so. It mushed in my mouth a little because it was so soft. The flavor was wonderful though. It had a pleasant cinnamon taste, which complemented the flavor of the carrots. I can imagine this mix tasting well with the addition of apple instead of carrot, or without anything added at all as a simple spice cake. However, this cake mix reminded me more of a muffin than a cake. Maybe it was the carrots, but it didn’t have the sweetness that I expected from a cake.
I made cake pops out of half of the cake. I will post more about that later. Stay tuned!

Thanks so much for this review I am always looking for great gluten free cake mixes. I think I would like that it didn’t taste as sweet. My son loves to eat cake and it tastes good to him then that’s wonderful for me.

Just another opinion on this mix. I found it to be cloying sweet for my tastes. Like eating pure sugar. Perhaps they have changed the mix since I tried it, but I don’t even want to think about eating it again. Keep in mind, I tend to cut back the sugar in all my baked goods if possible, guess it’s just a individual taste thing.

TO make it sweeter you can sprinkle a little stevia on top!
