Product Review: Hodgson Mill Apple Cinnamon Muffin Mix

Every Monday at my house is salad night. It is one night a week where we celebrate our vegetables with a light, fresh meal. I like to serve a side of rolls, muffins or bread with our salads. When I saw this at the store for three bucks I knew this would make a great side to our salad night.
To make eight muffins I added to the mix 1/4 c sugar, 1/4 c vegetable oil, 1/2 c milk, and 1 egg. Then let them bake for 15 minutes in a 375 degree oven. I like that I add the sugar to the mix so I have control of how sweet it is, and how much sugar I consume. The vegetable oil seemed like a lot for only eight muffins. While cooking the oil crept up along the sides of the muffin liners. Ewww! I did not love that.
In the mix there are real apples that have been dried. There is a plentiful amount of cinnamon to pair with the apples. The muffin was soft, but I was disappointed to have it fall apart somewhat easily. While taking the muffins out of the liners I had bits and pieces falling off. Then when I bit it they turned to chunks. In my mouth they crumbled more than what I would have liked them to. I am a muffin snob, though. I can make pretty awesome gluten free muffins. These were not as good as mine.
