Product Review: Chebe Focaccia Bread Mix

Another winner from Chebe!
Chebe sent me this focaccia mix to test, and it was pretty tasty. To prepare this gluten free flatbread, I added olive oil, shredded sharp cheddar cheese, eggs, and milk. I kneaded it by hand until all the ingredients were integrated and the dough felt fairly smooth. I pressed the dough evenly into a greased 9 inch pan and baked it for 35 minutes. When slightly warm, I cut the bread into wedges.
The result was a soft and flavorful flatbread that my gluten eating family gobbled up with our pasta dinner. This focaccia looked great- nice and brown on top without looking overdone. It had a nice texture and mouth feel, but was not crumbly or coarse like other gluten free breads can be. The flavor was pretty intense as well- lots of rosemary and basil aroma and flavor that paired well with the sharp cheddar cheese. This is definitely not a bland gluten free bread.

It was really good warm but stiffened up to chewy and tough when cool making it a bit wasteful if not eaten right away. Otherwise, good flavor.

I LOVE Chebe. We discovered it a few years ago and fell in love. The whole family now loves the ready to bake rolls (I stock up in October for plenty for Thanksgiving, when the stores seem to run short!).
Hubby had been to Brazil on a business trip and enjoyed tapioca bread down there. Wonderful surprise for him that we have it here in our fine state, and packaged here too.
I enjoy making the pizza crust into crackers, as the mix is already seasoned.
