Pamela’s Products Lucious Chocolate Cake Mix- wheat and gluten free- non-dairy

If you like Pamela’s Products Brownies, you will just LOVE this cake mix! And if that isn’t a good enough reason, every inch of the packaging is covered with a variety of gluten free recipes to try. Yum! Recipes include mocha cake, egg free chocolate cake, chocolate frosting, chocolate chip cake, chocolate pound cake, ultra rich chocolate cake.
This Pamela’s mix is easy to prepare, just add 2 eggs, oil and water; mix by hand, and pour into two 9 inch cake pans or into cupcake liners. I opted to make cupcakes, and found the batter easy to work with since it has a thicker, more traditional consistency.
These cupcakes were easy to frost once they cooled, but I honestly preferred them “naked,” since the flavor was so rich; It really didn’t need anything to dress up the mix. The flavor of these cupcakes is almost exactly like their brownies, but in a lighter form. However, I found the cupcakes to be somewhat dense compared to other mixes, so I would suggest using the 3 egg option listed on the instructions for a lighter, more traditional cake. This mix is sweeter, but not overpowering. The chocolate tastes more like a dark chocolate base, which I really enjoyed.
I froze extra cupcakes and they held up very well. The flavor and texture was not affected; However, the tops of the cupcakes did become extra moist on the top and slightly sticky when thawed completely. Overall, a yummy product I would buy again.
PROS: easy to prepare, freezes well, great rich chocolate flavor, many recipes on the package
CONS: tastes like their brownie mix, add the extra egg for a fluffier cake.

These look delicious! Your picture is really good. I will have to give them a try. Have your tried the Decadent Chocolate cake mix from The Gluten-Free Pantry? If so, how do you think the two mixes compare?

Did you try the frozen brownies microwaved? Just wondering if they would still be gummy if they were microwaved instead of just thawed…

Good idea Sea! You know what? I didn’t try to microwave them- the thought never occured to me! I think because they weren’t really “frozen,” even after a full 48 hours in the freezer. They were very cold and dense, but you could still eat them right away. I will have to remember that for next time. Thanks for the idea!

I know that I am really late on this thread, but I have to say that Pamela’s Chocolate Cake is my favorite of all the chocolate cake mixes that I have tried.
My normal method is to make the sour cream cake and then frost with mocha chocolate frosting. Then I freeze individual slices and pull one out at a time so I can enjoy it longer!
Now… If I only could find a good yellow/white cake mix… We will just have to keep searching for one!
