It’s Here! The Gluten Free Food/ Product Give-Away for March March 2
Baking and Cooking and Tasting . . . Oh My!
This month’s theme is gluten free baking and cooking basics- flours, seasonings, grains, spices, sweeteners . . . any gluten free food product or kitchen staple you need to whip up a yummy gluten free meal or dessert without the use of a quick mix. And, of course, the title of the theme comes from my daughter’s obsession with the Wizard of Oz. She has watched it no less than 12 times in the past three weeks, and as a result, the songs are stuck in my head all the time. Help!
Here is what’s up for grabs this month:

The all purpose flour has become one of my favorites, and the seasonings are great for marinades, meats, dips, vegetables, pasta and rice. They are also dairy free, yeast free, all natural with vegan options, and contain no MSG.

My absolute favorite gluten free baking/cooking product is stevia. It’s not only gluten free, but it also is good for my diabetes and is less destructive than other chemical sweeteners like Equal, Sweet n’Low, and Splenda. It comes in liquid form (drop into my coffee) and in powdered form (sprinkle over cereal or baking sugar substitute). It is easily found and relatively inexpensive (a liquid drop bottle may seem like it costs a lot but it lasts for a long time)!

My alltime favorite gluten-free product is Glutina’s Wafers, Vanilla with chocolate, and lemon-flavored. I believe I could live off of these cookies! I have tried some of your products and love them, too.

First, what a wonderful site! I live in Chicago and am hosting a two-day gluten free cooking conference where we are bringing in chefs from around the country to present. The website is http://www.glutenfreeclasses.com.
I just found you site last week and have been promoting it at our local groups. Someone was looking for a bread mix yesterday and I told them to check out your site.
Second, my favorite mix these days is the pumpkin bread mix from Gluten Evolution (Breads by Anna). I love how moist it stays, how easy it is to make, and that you can add cranberries, nuts, whatever you want.

My celiac husband’s favorite gluten-free product are any of the flavors of Nut Thins by Blue Diamond almond growers of California.
Favorite movie: Sense and Sensibility directed by Ang Lee, based on the Jane Austen novel.

My favorite product right now (even though I am new to this lifestyle) is Just the Cheese crunchy baked cheese snacks. There are different flavors and are good as a snack but they are GREAT as a crouton replacement on salads. You can find them at http://www.specialcheese.com or at specialty stores.

I am new to the gluten-free foods world, but so far my favorite item is the Glutino pretzels!!! I even used them in my favorite seasoned pretzel mix and they turned out great! They are pricey, however. BUT, if I am yearning for a delicious, crunchy snack, these are totally the way to go!!!
I also tried the Namaste cookie mix. I added chocolate chips, coconut, and a little bit of crunched up heath bars. I was delighted with the results! They were the best when they were still warm out of the oven.
Are there any brownie recipes that are not dark chocolate? I tried the Namaste brownie mix, which was good, but I prefer the milk chocolate-type of brownie as apposed to the dark chocolate type which seems to be all that I can find.
THANK YOU a million times over for your reviews and emails! It certainly makes life a little easier when dealing with what seems like impossible eating!

This is difficult! I love the Second Nature Taco, Chili and burger mixes but my favorite product would have to be either maseca or tamari.
Currently we are watching a lot of Asian films, but I don’t have a ‘favorite’ movie.

I almost never buy GF specialty products. My GF flour mix is a combo of Asian white rice flour and cornstarch. It’s more economical and I can make up a batch quickly that will last for months. I just add xanthan gum at the time of mixing to most, but not all recipes. I even use my former recipes just substituting GF flour and making sure all other ingredients are GF. So I guess my GF flour mix is my favorite. Did you know you can make almost any pie recipe into a crustless GF version by just adding 1/4 cup of GF flour to the mix. It works wonderfully for pumpkin, chocolate, coconut, etc.
And, my favorite movie has always been The Wizard of Oz. LOL, but true.

Our current favorite product is Gluten Free Pantry’s gingerbread mix. It is soo good as bread, sprinkled with powdered sugar or made as mini muffins. I sprinkle a little bit of organic sugar on the top of the batter before I put it in the oven to make that wonderfully crisp top! My kids LOVE this and will eat them for snacks or breakfast!
My favorite movie, right now, is “Once”.

I love florida’s naturals fruit bites – they are gluten free!! Love them — but i guess thats not a baking product.. in that case my favorite movie is Bad Boys..its hilarious and great action to boot.

I love Pamela’s Ultimate Baking and Pancake Mix. The pancakes made with it taste JUST like my family’s buttermilk pancakes, especially if you leave out the egg(s) (I double the recipe on the bag because dh and I love to eat to plate-sized pancakes) and use 3 T. organic flaxseed meal/flour + 3 T. (filtered) water instead. I was out of eggs one day and remembered that as a former vegetarian, I used to substitute flaxseed and water for eggs. Wow! Not only did the pancakes cook up more fluffy than they did with eggs, you could reallllly taste the buttermilk that’s in the mix. So that was truly a serendipity! Now I always use the flaxseed/water for pancakes.
(Email me and I’ll send my recipe to anybody who wants it, okay?) I also make a fabulous marshmallow brownie recipe with the Pamela’s mix, and my chocolate chip cookies are to die for…just like they always were, only now they’re GF!
Also, I love how I can use the baking mix for any of my nonGF recipes and they work perfectly–and in many cases, BETTER! For instance, I make peanut butter cookies with the Pamela’s mix, and they turn out soft and chewy, instead of crisp and sandy. (I and dh like soft and chewy cookies.) And for some reason–I know not why–the recipe now also makes about a dozen more cookies, too.
I get a big kick out of taking my recipes made with Pamela’s Ultimate Baking and Pancake Mix to church parties, potlucks, as gifts, etc. and having people take a bite–then say, “Wow! this is SO good! May I have the recipe?”–and THEN I get to freak them out by saying, “Sure! This is gluten-free!” and watch their eyes almost pop out of their heads. They are almost as excited as I am…and almost always, they know somebody who is GF themselves, or their child, etc. etc. I get to pass on great info about the mix and help others, as well as delight the tastebuds of those present. A win-win situation for all. :>)
