This is a cookbook even I can use successfully- and that’s a big deal!
It is no secret that I struggle with cooking sometimes- especially gluten free baking now that I am at a higher altitude. So most of the time, I don’t bother and will cook pasta or lean meats and veggies for dinner. When Rachel Carlyle-Gauthier, the “Gluten Free Mama” sent me this cookbook to use with her almond blend and coconut blend gluten free baking flour blends, I felt a little hesitant. However, I ended up pleasantly surprised. This cookbook is exactly something I – and other gluten free newbies- could handle and feel successful with.
Rachel is a Christian mother that has a daughter, Lexie, with multiple food sensitivities- one of which is gluten. For the first 20 months of her daughters life, Lexie was plagued with severe health issues. To help her daughter live a healthy and happy life, she dedicated her kitchen to creating flavorful gluten free foods. This cookbook is a product of her years of gluten free baking experience,and it utilizes her personal flour blends that can be purchased via her website. However, you do not have to use them to recipes to be successful. You may use your own gluten free flour blend, but depending on the flours you use, it may affect texture or flavor a little.
The first aspect I like about this cookbook is that the recipes are simple, easy to follow, and have fairly short ingredient lists to help keep the gluten free baking experience from seeming overwhelming.
Next, I liked that this cookbook begins at the gluten free baking basics. It provided kitchen organizing and utensil tips, gluten free baking and yeast tips, and information that helps those that might be new to gluten free baking.
Something else to note: On the front page it reads ” This book was designed to be nourishing food for the body, soul, and spirit. “ Therefore, most of the pages in this cookbook have a Biblical scripture or quote at the bottom of the page. For me, this wasn’t a big deal and it didn’t bother me, but if you are extra sensitive to religious issues, you may wish to consider this.
This cookbook has over 11 recipes divided into the following chapters: Breads; Biscuits, Rolls, & Bins; Muffins & Scones; Cakes & Brownies; Cookies & Bars; Pancakes & Fritters; Crackers, Crusts, Chips & More; and Frosting & Icings.
I took a long to explore this cookbook and experiment with many of the recipes before writing a review. At first, I had some trouble adapting the recipes due to my high altitude. After much experimenting, I found that adding extra flour and less liquids did the trick. The recipes I tried were moist and smooth with no grainy texture, and my family often did not know they were gluten free recipes! I was surprised to find that this cookbook even had recipes for flour tortillas, gluten free “goldfish” crackers, soda crackers, pizza crust, focaccia, crepes, and monkey bread! Nice!

Pros: simple recipes with tasty results- perfect for beginner or advanced gluten free cooks, use of Rachel’s prepared flour blends makes baking simple and successful.
Cons: For best results, use with her custom gluten free flour blends sold on her website, no suggestions for high altitude baking needs
