Product Review:EnerG Gluten Free Bread Crumbs- gluten free/ wheat free/ dairy free/ casein free / egg free / soy free/ nut free
I found myself in a fix for dinner. I was planning on making chicken tenders with my favorite coating, the Southern Homestyle corn flake crumbs. But, I was out. Oh no! So, I tried the Ener G bread crumbs, and prayed my picky kids would like them. My 10 ounce box of Ener G bread crumbs cost $2.99.
The bread crumbs appeared slightly yellow in color, mostly fine with larger pieces in texture, and coated my chicken easily. As I sauteed the chicken tenders, they created a crisp coating that wasn’t too thick and heavy.
The end result was great! The flavor was mild enough that you could easily add any spices or seasonings you wish, and the flavors would not compete. I added some garlic and parmesan cheese to my chicken coating, and it was so good, my kids inhaled them. THAT, is amazing. These gluten free bread crumbs are a good product that would work in a variety of recipes (chicken, baked mac & cheese topping etc).
Pros: Mostly fine texture, some larger bits; mild flavor, versatile, affordable price
Cons: Add your own seasonings for best results

The chicken tenders did turn out very nicely. My kids love to eat chicken tenders.
It’s interesting to see the ingredients to the Ener G bread too…several things I haven’t seen before…Glucono Delta Lactone and Nulomoline.

I didn’t like that ingredient list. I try to use commerical products that don’t have a ton of ingredients I am clueless about. An easy way to make GF chicken tenders is just to use potato chips. Use any GF potato chips (like regular Lays or Utz). Mash them into crumbs in a ziploc bag with your rolling pin or something similar. Add any seasoning you want. I usually add a little black pepper. Cut chicken into bite-sized pieces and just dip into potato chip crumbs. Place on greased pan (I use Pam). Bake like you normally would. About 400 degrees for 20 minutes is usually good. I make these for our family and for our parties. We always have potato chips on hand and chicken breasts in the freezer so it’s easy to bake up a batch.

I’m thinking of using Nature’s Best GF Honey’d Corn Flakes for a breading on chicken cutlets. The cereal is so yummy.
