Chocolate Chip Cookies- Pamela’s gluten-free recipe

1/2 cup butter

1 large egg

1 1/2 cups Pamela’s Baking & Pancake mix

1 tsp. GF vanilla

1/4 cup white sugar

1/4 cup brown sugar

1 1/2 c. mini chocolate chips

3/4 c. chopped walnuts

Cream butter and sugar, add egg and vanilla. beat together. Add Pamela’s mix, chocolate chips, and nuts. Place 1 tbsp. spoonfuls on a greased cookie sheet. Flatten. Bake at 350 degrees for 15 minutes. let cookies cook slightly on cookie sheet. yields; 20 cookies

Ooooo, I like this seasoning! I use it to make beef and chicken tacos, burritos, salads and quesadillas. This seasoning offers a nice mexican flavor without worrying about gluten ingredients. It is not very spicy and would be appropriate for those that prefer mild or medium heat.

I purchased this at a natural foods store for $4.49 for a 4.5 oucne bottle,and it lasts quite a long time, since a little goes along way.

Rating: 4 stars

Ingredients: garlic powder, ground cumin, spanish paprika, salt, onion powder, cayenne, oregano powder.

Kinnikinnick Tapioca Rice English Muffins- Gluten free

I purchased these muffins in the frozen foods section of a natural foods store for $5.29 for a package of four muffins. These aren’t your average sized muffins though- they are HUGE! Very thick, very tall. You could easily split them in half and save one half for later. Each muffin is 170 calories

The package suggests microwaving or toasting for best flavor.  The first time I zapped the frozen muffin in the microwave for 40 seconds. It was perfectly thawed and warmed. So much so that the “browned” top and bottom of the muffin started to flake off, leaving a holey interior exposed. These muffins are soft with your “typical” rice bread flavor and texture- mild, dense, almost sponge-like. I tried to flatten the bread but it would bounce right back( for the most part!). It tasted good with butter and GF jam. Good, but not good enough to write home about. As I ate the muffin, it retained it’s shape and did not break off into pieces or crumble in my hands, as some rice flour products have done.

Overall, it was a decent gluten-free enlgish muffin. I would suggest toasting it for best results.

Pros: nice flavor, large size

Cons: dense and heavy, high price

Bionaturae Spaghetti Gluten Free Pasta

Another nice gluten free pasta product! And it’s made in Italy!

This pasta is made with rice, potato and soy, which gives it a slightly different flavor than your standard rice noodle option. To me, I could almost forget it was gluten free! The texture was like a traditional spaghetti and wasn’t too heavy or sticky. I cooked it al dente and paired it with a spicy red peper pasta sauce and topped it with some parmesan. The noodles held their shape nicely, although the sauce didn’t really “stick” - I had to work to get pasta on my noodles before the fork made it’s way to my mouth. Overall, a small nuisance, but something to consider.

Blue Diamond Natural Nut-Thins Crackers -Pecan flavor- gluten free

 Yum Yum Yum! Did I happen to mention these crackers are yummy?

These round crackers are perfect for snacking right out of the box. They have a nice nutty flavor with a hint of sweetness from the pecans. They are also perfectly salted and give your mouth something to smile about. By far my favorite Nut-Thins flavor- they’ll be a staple in my pantry.

I purchase these crackers from my local natural foods store for $2.89 for a 4.25 ounce box.

Pros: awesome flavor

Cons: the box looks big, but there really aren’t that many crackers inside. Be sure to buy two!

McCann’s Irish Oatmeal- gluten-free

Now, I have to admit, I have only used this for baking cookies and making apple crisp, so I have no clue if it actually makes great hot oatmeal. 

This brand is imported from Ireland and costs $3.99 for a 16 ounce box at my natural food store. They assured me it was a gluten-free product, and I had no reaction when I ate it. However, use at your discretion (Note added: this product meets European stnadards for “gluten-free”, but does not meet Canadian standards, which are more strict. the US doesn’t have any real standards right now.)

That being said, these oats are fantastic and make amazing apple crisp ( recipe is listed in the recipe section on this site) The cookie recipe on the box is also decent as well. The oats seem to be smaller than your typical Quaker Oat variety, but they taste really good.

Brown Rice Snaps -Tamari Sesame flavor- gluten free crackers

These round crackers are just right for snacks or appetizers! They are flat and very crunchy with a light sesame flavor. I like layering them with natural peanut butter and bananas or a bit of jam. Even thin slices of cheese or meat would be good, too.I personally don’t like them plain, as they have a bit of an aftertaste.  I always have to have something paired with this particular flavor.

I keep an open package contained in a ziplock, and the shelf life on them is incredibly long. I usually purchase them at my local natural foods store or Wegmans for $3.49.

I really can’t think of any cons on this snack food!

Garlic Basil Pizza Crust gluten free

*This recipe makes one 12 inch pizza crust

2-1/2 cup rice flour
1/4 ounce gluten-free quick-rise yeast
1 teaspoon salt
1/2 teaspoon xanthan gum
3 tablespoon olive oil
1-1/2 cup warm water; divided (120-130 degrees)
1 tablespoon honey
2 tsp. dried basil
1 clove minced garlic

Cornmeal

Directions:
Combine flour, yeast, salt and xanthan gum in large bowl. Stir in 1 cup water, olive oil and honey.

Use hands to work dough (dough will be soft and crumbly). Add just enough of the remaining 1/4 cup water to hold mixture together. Knead dough in bowl 5 minutes. Cover; let rest 10 minutes.

Lightly grease 12-inch pizza pan; sprinkle with cornmeal. Flatten dough into round disk; press dough into pan, using cornmeal on the hands to prevent sticking. Top with your favorite toppings and bake at 425 degrees 25 minutes or until crust and cheese is golden brown.

Crunchy Peanut Butter Cookies - Gluten Free

1 cup GF natural peanut butter

1 cup brown sugar

1 cup chocolate chips

1 t baking soda

1 t GF vanilla

1 egg

drop spoonfuls onto parchment lined baking sheets

350 degree oven, bake 12 minutes, cool on cookie sheet 5 min, then move to wire rack. Enjoy!

I love these gluten free Glutano maize noodles as a replacement for egg noodles! I buy them at my local natural foods store for $3.69 for a 8.8 ounce bag, which serves two to three people.

The noodles fresh out of the bag have a slightly twisted shape with a light yellow color, just like thin egg noodles. They cook in a mere 6 minutes and taste absolutely yummy with butter and garlic or a gluten free cream sauce. I use them in my stroganoff recipe with no problems. The noodles are a bit chewy and keep their shape after cooking and in recipes with minimal breakage. Be careful not to overcook, these gluten free noodles may clump together and seem a bit sticky.

Pros: Great egg noodle replacement, cooks fast, looks appetizing

Cons: be careful not to overcook
